Hi.  I want to makeover my Make Ahead Egg Bake to add vegetables and cut out fat.  Can you help?Surprised


Here's the recipe:


1 lb ground beef


6 eggs beaten


2 cups light cream or half and half


1 cup cheddar cheese


1 tsp salt


1 tsp ground mustard


1 can french fried onion


 


Fry ground beef until crumbly and brown.  drain.  Add remaining ingredients except french fried onions and mix well. stir in 1/2 can french fried onions.  Pour into 9x13 pan. Refrigerate 8 hours or overnight.  bake at 350 for 45 minutes.  sprinkle with remaining onions and bake 5 minutes more.  let stand for 15 minutes.

  • Choose extra lean ground beef (sirloin) or experiment with ground turkey breast.

 

  • Replace whole eggs with egg substitutes. (In general, 1/4 cup egg substitute is equivalent to 1 whole egg.)

 

  • Use skim milk as a substitute for the light cream or half and half.

 

  • Substitute reduced-fat Cheddar cheese for its full-fat counterpart.

 

  • Omit the French fried onions and consider adding chopped fresh onion instead.

 


Adding vegetables to this recipe will also add flavor and a nutritious boost:


 

  • Chop up broccoli, mushrooms and tomatoes and add to your dish.
